Our Riviera Ligure di Ponente - Pigato wine is obtained from grapes selected from those harvested from our oldest vines, some of which have been productive for over half a century. We have named it 'A ÇERNIA', which in the Ligurian dialect means precisely the selection referring to the grapes, as the difference in the quality of the wine is mainly given by the quality of the 'raw material'.
Variety: Pigato
Description: Straw-yellow in color, it has characteristic aromas of Mediterranean scrubland and medicinal herbs, notes of white flowers, fruit, and marine iodine sensations. On the palate, it is harmonious and balanced, with moderate acidity, good intensity, and a mineral vein.
Origin: Arroscia Valley. Older vines located in the 'Croci' area with soil characterized by red clays rich in minerals, especially iron. The grape yield per plant is very low.
Training System: Guyot with one or two fruiting spurs depending on the vegetative conditions of each vine, in order to maximize fruit quality and preserve the plants.
Harvest: typically in the second half of September, with manual harvesting in perforated crates to avoid heating of the grapes.
Vinification and Aging: Soft pressing, must clarification, and fermentation initiation in stainless steel. Must fermentations take place in stainless steel tanks at controlled temperature, maturation for four months on its own fine lees, and refinement for one month in bottle.
