It is entirely obtained from olives of the 'Taggiasca' cultivar harvested on our farm, processed in our cooperative mill in order to maintain the typical characteristics of the product, not only due to the variety but also to the pedoclimatic characteristics of the Ranzo territory.
With great purity and low acidity, its distinctive feature lies in its delicacy. The color ranges from yellow to green and the taste is pleasantly delicate and fruity, with a sensation of sweetness and a hint of spiciness. On the nose, it is moderately to mildly fruity, with predominant aromas of artichoke and a light hint of almond.
In the kitchen, it enhances all foods without overpowering their flavors thanks to the absence of excessive notes.
Dietetically, it is very balanced and so delicate that it can even be used for making desserts.
Ideal for accompanying sautés, fish fries, boiled fish, grilled fish, and vegetable salads. Highly recommended for pesto and, in general, for all Ligurian cuisine as evidence of its connection to the territory.
It is not filtered but naturally allowed to settle inside airtight containers at a constant temperature, in order to release it naturally by gravity from impurities without promoting oxidation.
It should be stored in a cool, dry place, away from light and sources of heat.
